Easy and Tasty White Chili

This chili is easy to make, great anytime, and full of flavor but not too spicy, made with white beans and chicken. From now on, I can say this is one of my favorite chili recipes.

2 tablespoons olive oil

3 pounds skinless, boneless chicken tights, cut into 1-inch cubes

2 cups chopped onions

1 1/2 teaspoon salt

1 teaspoons garlic powder

1 tablespoon cumin

2 teaspoons dried oregano

1 teaspoon black pepper

1/4 teaspoon cayenne pepper

1  1/2 tablespoon chili powder ( you can increased the amount for a stronger flavor)

2 cups chicken broth

1 cup Lager beer

3 cans cannellini beans

2 (4-ounce) cans diced green chiles

1/4 cup chopped green onions

1/4 chopped fresh cilantro

1 cup shredded Monterey Jack cheese

  1. Heat oil in a wide, 5-quart pot over medium-high heat. Cook chicken and onion, stirring, until onion is tender and chicken no longer pink, about 7 minutes. Stir in salt, garlic powder, cumin, oregano, black pepper, chili powder and cayenne, and cook 3 minutes more.
  2. Add broth, beans, beer and chiles. Bring to a boil, reduce heat, and simmer, uncovered, until chicken is cooked through and flavor has developed, about 15 to 20 minutes.
  3. Top each serving with green onions, cilantro, and shredded cheese.
  4. It can be paired with a Lager or IPA beer.
